Spinach Stuffed Portobello Mushrooms


Ingredients:


* 4 portobello mushroom caps, stems removed

* 3 cups spinach

* 1 egg

* 1 tbs garlic

* 1/2 c onion (finely chopped)

* 1/4 c Parmesan cheese

* 1/4 c mozzarella cheese

* 3 tbs of flax meal or almond flour pepper

* Olive oil spray


Directions:

- Preheat oven to 350 degrees

- Brush mushroom caps with spray oil

- Arrange mushrooms caps on baking dish

- Bake for 12 min. Drain any juice.

- Beat egg, garlic, pepper, onion in bowl

- Stir spinach, Parmesan cheese, 3 tbs Mozzarella cheese & 3 tbs of flax meal or almond

flour into the egg mixture

- Pour mixture over mushroom caps. Sprinkle remaining mozzarella cheese and fla

meal or almond flour.

- Bake for 10 mins.
