Healthy Breakfast Quesadilla


* 2 Low-carb multigrain tortillas from

Mr. Tortilla (I order mine online. 1 carb per tortilla)

* 2 tbsp of non-fat vegetarian refried beans or black beans (canned)

* 1 egg

* 2 slices of avocado

* 1/4 cup of Vegan or light Mozzarella cheese

* Hot sauce

* 1 tsp of coconut oil

* Pepper


-Heat coconut oil and add tortilla to it with cheese on top. Fry for 2 mins on each side.

-Microwave refried beans.

-Add refried beans to tortilla, hot sauce, 1 egg, avocado and pepper.

Super easy and yummy!!
